Fluffy Mushroom Omelette

Fun and easy keto fluffy mushroom omelette. Filled with healthy fats and lots of flavor this simple omelette will kick start your day.
- 1/4 cup mushrooms - sliced
- 1 ounce cream cheese - softened
- 1/8 cup of heavy whipping cream
- 2 large eggs
- 1/8 teaspoon of ground pepper
- 2/3 tablespoons of Ramano cheese - grated
- Cooking oil/butter of choice
- In a bowl mix cream cheese, heavy whipping cream, and eggs until well blended.
- Preheat medium saucepan with cooking oil of choice on medium heat. Add sliced mushrooms to plan and cook for about 3 minutes. Stir as needed. Remove from pan when cooked
- Turn heat to medium low. Add more cooking oil. Pour egg mixture into pan. Let eggs set. To cook eggs evenly pull edge of eggs toward pan center. about 4 minutes .
- When there is a nice layer of cooked egg on the pan sprinkle in your cheese, pepper, and cooked mushrooms.
- Fold omelette in half with a spatula and slide onto a plate. Now you have the perfect fluffy mushroom omelette. Enjoy!
Note: There may be a bit of raw egg in step four. The main thing is having a nice layer of cooked egg on the pan. When egg is folded the center will cook itself.
